Receiving and Inspecting
  • Unripe Hass avocados should be firm to the touch with pebbly skin that is free of bruises and soft spots.
  • Ripe Hass avocados should have dark, almost black skin. Ripe fruit will yield to gentle pressure. The pulp of ripe Hass should be golden-green and free of spots or brown streaks.
Storing and Handling Tips
  • Ripe and unripe Hass should be held at 40-42 ° F. (4-5 ° C.) and 85-95% humidity. To ripen Hass avocados, maintain temperatures of 65-75 ° F. (18-24 ° C.).
  • Unripe avocados produce low levels of ethylene. However, ripe fruit produces significant amounts of ethylene, so keep away from produce items that are sensitive to ethylene gas and may be damaged by it. Avocados are also sensitive to ethylene. Exposure to the gas will promote the continuation of the ripening process.
  • Handle avocados carefully to prevent bruising. Do not dump fruit into displays.
  • Keep avocados dry during storage
Retail Display and Merchandising Tips
  • Display avocados at room temperature. Do not water sprinkle or top ice.
  • Check avocado displays often and replenish fruit as needed. Always rotate avocados on a first-in, first-out basis.
  • Give customers a choice by offering both ripe and unripe fruit.
  • Cross-merchandise avocados with complementary items such other popular guacamole ingredients including tomatoes, fresh chile peppers, limes and tortilla chips; or with other salad ingredients.
  • Educate shoppers on storing and handling avocados at home by offering these tips: Store unripe avocados at room temperature. Place in a paper bag to speed ripening. Once ripe, avocados may be refrigerated.
